We are uploading it to the doc center. In the mean time you can sue the following:)
You only need to read the OpenVPN file, however in order to set up Ubuntu and put the OpenVPN Server on it you need the other ones. My advice go through the manual, see what you are missing and if needed go and read how to deploy it. In short you need a server somewhere, as the Gateway only has a VPN client in it.

Does all the traffic go through the VPN tunnel (lora packets and console admin) or just the admin console?
When I tried setting it up I could remote into the gateway but lost all connection from gateway to the external lorawan server.
