Looking to run a Wisblock Meshtastic starter kit in an enclosure with an external antenna for the Rak12500. Does anyone have any experience or recommendations for a different GPS antenna?

Generally the GPS chip used on the RAK12500, allows either passive or active antenna.
As long as you are within this specs, you are good.
What you will likely need is to have a pigtail that can convert IPEX to SMA/RP-SMA or N-type connector which are common to outdoor GPS antenna.
