Is the source for RAKPiOS available so that I can build it myself?
Or maybe I can build Raspberry Pi OS and adopt it to the RAK7391 by installing drivers and apps?

Building RAKPiOS image by yourself is available here - GitHub - RAKWireless/rakpios: RAKPiOS - Raspberry Pi OS based operating system for the RAK WisGate Developer products
You can probably build the necessary drivers yourself.
