Can I power the whole package with PoE and add a battery to keep the device running when PoE power goes out? Will PoE charge the battery?

Yes, the PoE will charge the battery. And the battery will keep the device powered up.
What size battery do you recommend? What is largest size that will fit in the gateway?
Thanks for the reply. I found a 2200mAh LiPo 11 x 34.5 x 52mm that might fit above the core, between antenna and Ethernet cable if I stick it to the lid. Is it safe to put one there? Will it interfere with core or antenna?
It might influence the performance of the BLE antenna.
The LoRa antenna is external, the battery will have no influence on it.
Thanks. It’s only $10. I’ll try it. I wonder how long 2200mAh will keep the device running. MQTT won’t be connected if PoE goes out, but I would like it to stay on during brief power outages.
