Can I connect external sensors to RAK8212M ? I would like to add load cell via HX711 and few DS18B20 wired temperature sensors.

Yes you can add sensors. There is I2C, SPI, etc. As for the battery, I don’t think there is, not sure though.
DS18B20 should work, not sure about the HX711, never used one.
