Is it possible to convert the “no Ipex” version (sku: 305044) to “with Ipex” (sku: 305045) by desoldering the 0 ohm resistor and soldering the Ipex connector?

Yes, it is possible if you are good with small components.
Keep in mind, doing that voids your warranty.
